Air Blast is a nice dogfight simulator that you will enjoy because it is built mainly like a simulator and you will be able to control the airplanes nicely using a joystick. Air Blast is the winner of a contest held in 2005 so you know you are playing a good valued game.
You will be able to select different game modes but you can only do so after you play the training missions in which you are required to learn the basics control of your fighter plane. Afterwards you will be able to engage in full scale battles in order to destroy your enemies.
